* Steak Quesadillas *



*INGREDIENTS:

°400 g chuck of beef, cut into strips
°1 liter beef stock
°6 tortillas 200 g grated cheddar cheese
°200 g canned corn kernels, well drained
°150g cottage cheese
°10 cl fresh cream
°1 green onion
°2 tablespoons salsa (very spicy Mexican sauce)
°1 bell pepper, cut into small strips
°2 tablespoons peanut oil

*STEPS

Preparing the beef quesadillas:
Bring the broth to a boil and cook the meat for 45 minutes.
Drain and sauté in oil. After 5 minutes, add the corn kernels, bell pepper and cheese. Stir in the cream, cottage cheese and chopped onion, as well as the salsa and a little salt. Cook for another 5 minutes over medium heat, stirring.
Cooking the beef quesadillas:
Arrange the tortillas on the baking sheet. 4 for a few minutes to warm them up.
Dressing the beef quesadillas:
Place each tortilla on a plate. Spread the filling on top. Cover with aluminum foil. Put back in the oven for 3 minutes. Serving hot.
